Material CompositionStainless steel pans are often made from a combination of metals. ConstructionThe construction of a stainless steel pan affects its heat distribution and durability. Fully-clad pans have layers of metal (usually aluminum or copper) sandwiched between layers of stainless steel throughout the entire pan, providing even heat distribution. Bottom-clad pans have a disc of metal at the base, which can lead to uneven heating. Fully-clad pans are ideal for those who cook frequently and need consistent results, while bottom-clad pans may be sufficient for occasional use.
ThicknessThe thickness of the pan, often measured in millimeters or gauge, impacts its heat retention and durability. Thicker pans (3-ply or 5-ply) tend to retain heat better and distribute it more evenly, reducing the risk of hot spots. Thinner pans may heat up quickly but can warp over time and may not distribute heat as evenly. If you cook a variety of dishes and need reliable performance, opt for a thicker pan. For lighter cooking tasks, a thinner pan may suffice.
Handle DesignThe design and material of the handle can affect your comfort and safety while cooking. Stainless steel handles are durable and oven-safe but can get hot during cooking. Handles with silicone or plastic grips stay cooler but may not be oven-safe at high temperatures. Look for handles that are securely riveted to the pan for stability.
